Banana Date Loaf
This banana bread is a perfect lunchbox hit. I tend to make a huge batch of it then pour them into a little finger cake tray or a cupcake tray would work. Once they have cooled I then place them in zip-lock bags then into the freeze then on Sunday I will pull out a bunch to last the whole week. Lunch times made a whole lot easy not to mention that they are gluten and dairy free!
Preparation Time: 10 mins
Cooking Time: 60 mins
Ingredients:
- 125g dairy free butter
- 1/3 cup honey
- 1 large egg
- 2 tsp lemon juice
- 1 cup mashed bananas
- ½ cup coconut cream
- 1 cup steel cut oats
- 1 cup GF flour
- 2 tsp baking powder
- ½ tsp salt
- ¾ cup chopped dates
Method:

Cream the butter and sugar well.

Beat in the egg and lemon juice.

Combine bananas, yogurt stirring lightly.

Fold in the oats and sifted flour, baking powder and salt into the mixture and alternate with the bananas and dates. (For this, I just whacked the whole load in the Kitchenaid on low speed)

Bake for an hour at 180 degrees Celsius (350F)
