Healthy Green “Shots”
Disclaimer: these aren’t as scary as they look, I promise. Although a green liquid isn’t most people’s first choice of drink, this little powerhouse is surprisingly delicious. Whenever I get my juicer out and make tiny juice “shots”, I can’t help but think that I’m living in the future. Kind of like taking a little pill that says ‘salad’ on it, except my salad pill is a little vial of green liquid. I digress – however, these little shots are just like a sweet salad on a summer day.
They begin with a layer of kale, then a layer of apple, then a layer of spinach. I know that a kale and spinach juice doesn’t sound like the most appetizing thing in the world, but you’d be surprised how much the sweetness of the apple counteracts the bitterness of the greens. Plus, these little shots are so small that you can down them in one sip and still be getting all of the nutrients! It’s incredible!
Kale and spinach are both chock full of nutrients that your body needs. Kale is a superfood in itself, containing loads of vitamin K, A, C, fiber, iron, calcium and antioxidants. Spinach is full of Vitamins A, C, K, B2, B6, potassium, magnesium, iron, and protein. Phew! It’s hard to find more nutrients in such a small serving.
It’s important to note that because this juice doesn’t have any preservatives, it’s best right out of the juicer. I wouldn’t recommend making a big batch and storing it for later.
This recipe makes 2 servings, but can easily be halved or doubled.

- 2 small apples (a sweet variety, such as gala)
