Vegetable Samosas
Little packets of yumminess, based on an Indian snack, but without too many spices or heat.
Makes: 12 samosas Preparation Time: 20 mins Cooking Time: 25 mins
Ingredients:
- 500g/1lb puff pastry (you can use filo or shortcrust if you want)
- 1 egg, beaten
- 125g/4oz cooked peas, or combination of leftover vegetables
- 1 small onion, chopped
- 1 tbsp vegetable oil
- 1 tbsp mild curry paste
- 1 tsp turmeric
- 75g/3oz cooked potato in small dice
- 1 tbsp tomato puree
- Flour for dusting
- Seasoning if required
Method:

Heat the oven to 200°C/400°F/gas mark 6.

Dust a surface with flour, and roll out the pastry until 3mm/1/8 of an inch thick.

Cut into 12 square shapes or circles if you prefer and put heaped teaspoon of the mixture into the centre. Brush the edges with milk and then fold up into triangles or half moon shapes if you have cut the pastry into circles.

Brush with milk and sprinkle over some turmeric. Alternatively, you can mix the turmeric in with the milk before brushing.

Bake in the oven for 15 minutes until golden. Leave to cool and refrigerate overnight.
